Chelsie Schroeder is the owner and pastry chef of The Bubbly Tart. Born and raised in small town Nebraska, she found her love of food by working for her parents in their café. After high school, she moved to Los Angeles to attend a Le Cordon Bleu program, where she graduated with honors. Deciding she wanted to be closer to family, Chelsie moved to Omaha to begin her dessert journey here.
She spent 12 years working as a Pastry Chef for a local catering company before opening TBT in 2019. With the help of Kitchen Council, a commercial kitchen located over in Council Bluffs, she was able to achieve her dream of opening her own bakery.
